Prepare the Ingredients
Start by preparing all your ingredients. Mince the garlic cloves, chop the parsley and cilantro, and zest the lemon.

Cook the Couscous
In a medium saucepan, bring 2 cups of water to a boil. Add the Israeli couscous and a pinch of salt. Reduce heat to low, cover, and simmer for about 10 minutes or until couscous is tender and water is absorbed. Remove from heat and set aside.

Sauté the Garlic and Herbs
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the chopped parsley and cilantro, and cook for an additional 2 minutes.

Add Sofrito
Stir in the sofrito and combine well with the garlic and herbs. Cook for another 2-3 minutes until everything is heated through.

Cook the Mahi Mahi
In a separate pan, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the mahi mahi fillets with salt and black pepper. Once the oil is hot, add the fillets and sear for about 4-5 minutes on each side, or until they are golden brown and cooked through.
