Fonduta Preparation

    Prepare the Artichokes

    Preheat the oven to 400°F (200°C). Cut the tops off the artichokes and trim the stems. Rinse them under cold water and place them in a bowl of water with lemon juice to prevent browning.

    Roast the Artichokes

    Place the artichokes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast in the preheated oven for 25-30 minutes until tender and slightly charred.

    Cook the Bacon

    While the artichokes are roasting, cook the bacon in a skillet over medium heat until crispy. Remove from the pan and place on paper towels to drain. Once cooled, chop into small pieces.

    Prepare the Fonduta

    In a saucepan, combine the roasted artichokes (scooped from the leaves), cream cheese, heavy cream, Parmesan cheese, minced garlic, salt, and black pepper. Heat over low heat, stirring until the mixture is smooth and creamy.

    Once the fonduta is ready, stir in the chopped bacon. Adjust seasoning with more salt or pepper if needed.
