    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water to remove any dirt. Pat them dry with a paper towel.

    Season the Potatoes

    Poke each potato several times with a fork to allow steam to escape. Rub the potatoes with olive oil and sprinkle salt and black pepper over them for flavor.

    Bake the Potatoes

    Place the seasoned potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, until the skin is crispy and a fork easily pierces through the flesh.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and let cool on paper towels. Once cooled, chop the bacon into small pieces.

    Make the Parmesan Cream

    In a mixing bowl, combine the sour cream and grated Parmesan cheese. Mix until well combined and set aside.

    Prepare the Toppings

    Chop the pickled peppers and slice the green onions thinly.

    Assemble the Potato Jackets

    Once the potatoes are done baking, carefully slice each potato lengthwise and gently squeeze the sides to open them up. Spoon the Parmesan cream mixture into the center of each potato, top with crispy bacon, pickled peppers, and green onions.

    Serve the potato jackets warm, garnished with additional Parmesan cheese or green onions if desired.
