Biscuits

Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Cut in Butter
Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Add Milk
Make a well in the center of the mixture and pour in the milk. Stir gently until just combined, being careful not to overmix.

Shape and Bake
Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Cut out biscuits using a biscuit cutter or a glass and place them on a lined baking sheet. Bake in the preheated oven for about 12-15 minutes or until golden brown.
Gravy

Cook Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and crumble it once cooled. Leave the bacon drippings in the skillet.

Make Roux
Sprinkle the flour into the skillet with the bacon drippings and whisk continuously for about 1-2 minutes until it forms a roux.

Add Milk and Cheese
Slowly add the milk to the roux, whisking to prevent lumps. Cook until the mixture thickens, then stir in the grated parmesan cheese, crumbled bacon, salt, and black pepper. Simmer for an additional 2-3 minutes.
