Preparing the Fish

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Fish

    Rinse the whole black bass under cold water and pat it dry. Rub the fish inside and out with olive oil, salt, and black pepper. Stuff the cavity with sliced garlic and fresh thyme.

    Prepare for Roasting

    Place the fish on a baking sheet lined with parchment paper or in a roasting pan.

Making Salsa Verde

    Combine Ingredients

    In a medium bowl, mix together chopped parsley, basil, capers, minced garlic, olive oil, lemon juice, and salt. Stir until well combined.

    Adjust Seasoning

    Taste the salsa verde and adjust the seasoning with more salt or lemon juice as needed.

Roasting the Vegetables

    Prepare the Vegetables

    Wash the fingerling potatoes and cut them in half lengthwise. Peel and cut the carrots into sticks.

    Season the Vegetables

    In a large bowl, toss the fingerling potatoes and carrot sticks with olive oil, salt, and black pepper.

    Roast the Vegetables

    Spread the seasoned vegetables on the baking sheet around the fish. Place in the preheated oven and roast for about 25-30 minutes until the fish is cooked through and the vegetables are tender.

Serving

    Plating the Dish

    Once cooked, remove the fish and vegetables from the oven. Carefully transfer the fish to a serving platter and arrange the roasted vegetables around it.

    Add Salsa Verde

    Drizzle the salsa verde over the roasted fish and serve immediately.
