Preparation
Prepare the Pork Tenderloin
Trim any excess fat from the pork tenderloin and season it with salt and black pepper on all sides.
Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, and cook until translucent, about 3-4 minutes. Add the sliced carrots and cook for another 3 minutes. Then, add the zucchini and red bell pepper, and sauté for an additional 5 minutes until the vegetables are tender.
Sear the Pork
In a separate large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the seasoned pork tenderloin and sear it on all sides until browned, about 2-3 minutes per side.
Cooking
Deglaze and Simmer
Pour the white wine into the skillet with the seared pork to deglaze, scraping up any browned bits. Let it simmer for 2-3 minutes, then add the chicken broth and minced garlic. Bring to a simmer.
Add Vegetables
Add the sautéed vegetables and thyme leaves to the skillet with the pork. Cover and let it cook on low heat for about 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
