Method

Whole Branzino

    Prepare the Branzino

    Preheat your oven to 400°F (200°C). Rinse the whole branzino under cold water and pat dry with paper towels. Score the fish on both sides with two or three shallow cuts.

    Season the Fish

    Rub the branzino with olive oil, salt, and black pepper, ensuring it gets into the cuts. Squeeze the juice of half a lemon over the fish and stuff the cavity with lemon slices.

    Roast the Fish

    Place the branzino on a baking tray lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until the flesh is opaque and flakes easily with a fork.

Salsa Verde

    Prepare the Salsa Verde

    In a food processor, combine parsley, basil, garlic, capers, Dijon mustard, and red wine vinegar. Pulse until finely chopped.

    Add Olive Oil

    With the food processor running, gradually add the olive oil until the mixture is well combined but still slightly chunky. Season with salt and black pepper to taste.

Broccolini

    Prepare the Broccolini

    Trim the ends of the broccolini and rinse under cold water.

    Sauté the Broccolini

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the broccolini, salt, and black pepper. Cook for 5-7 minutes until tender yet crisp.

Patatas Bravas

    Prepare the Potatoes

    Peel and cut the potatoes into 1-inch cubes. Rinse under cold water and pat dry.

    Fry the Potatoes

    In a large skillet, heat olive oil over medium-high heat. Add the potatoes and fry until golden and crispy, about 10-15 minutes. Drain on paper towels.

    Season the Potatoes

    In a bowl, toss the fried potatoes with paprika, garlic powder, salt, and black pepper to taste.
