Green Beans and Potatoes

Method

Prepare the Whole Barramundi

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Fish

    Rinse the whole barramundi under cold water and pat dry with paper towels. Rub the fish inside and out with olive oil, salt, and black pepper. Stuff the cavity with lemon slices and fresh herbs.

Prepare the Salsa Verde

    Mix the Salsa Verde

    In a bowl, combine chopped parsley, chopped capers, minced garlic, red wine vinegar, olive oil, salt, and black pepper. Mix well until combined and set aside.

Cook the Green Beans and Potatoes

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the halved or quartered potatoes and cook for about 10-12 minutes, or until fork-tender.

    Add the Green Beans

    Add the trimmed green beans to the pot with potatoes and cook for an additional 4-5 minutes until the green beans are tender but still crisp.

    Drain and Season

    Drain the potatoes and green beans and return them to the pot. Drizzle with olive oil, salt, and black pepper, and toss to combine.

Roast the Barramundi

    Roast the Fish

    Place the prepared barramundi on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the flesh is opaque and flakes easily with a fork.

Serve the Dish

    Plate and Serve

    Once the barramundi is cooked, remove from the oven and let it rest for a few minutes. Serve the fish on a platter with the green beans and potatoes on the side, drizzled with salsa verde.
