Method

Preparing the Venison

    Marinate the Venison

    In a bowl, combine olive oil, minced garlic, rosemary leaves, salt, and black pepper. Add venison steaks to the bowl and coat them thoroughly with the marinade. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.

    Preheat the Grill or Pan

    If using a grill, preheat it to medium-high heat. If using a skillet, place it over medium-high heat and add 1 tablespoon of butter.

Cooking the Venison

    Cook the Steaks

    Once the grill or pan is heated, remove the venison steaks from the marinade, letting the excess drip off. Place the steaks on the grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness.

    Baste with Butter

    During the last minute of cooking, add the remaining butter to the skillet or brush it over the steaks on the grill. Allow it to melt and baste the steaks for added flavor.

Serving

    Rest and Serve

    Remove the venison steaks from the heat and let them rest for about 5 minutes. Serve with mashed potatoes and green beans if desired.
