Chop the Vegetables

Wash and chop the red bell pepper, zucchini, and eggplant into bite-sized pieces. Dice the onion and mince the garlic cloves.

Heat Olive Oil

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes or until translucent.

Add Garlic

Add the minced garlic to the pot and sauté for an additional minute, being careful not to burn it.

Cook the Vegetables

Stir in the chopped red bell pepper, zucchini, and eggplant. Cook for about 5-7 minutes until the vegetables are slightly softened.

Add Tomatoes and Broth

Pour in the canned diced tomatoes (with juice) and the vegetable broth. Stir well to combine.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Add salt and black pepper. Allow to simmer for about 20 minutes, stirring occasionally.

Add Fresh Basil

In the last 5 minutes of cooking, stir in the chopped fresh basil. If using, add the red wine at this stage for an enhanced flavor.

Taste and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese if desired.
