Garlic Aioli

Preparation of Garlic Aioli

Make the Aioli
In a mixing bowl, combine the egg yolk, minced garlic, and lemon juice. Whisk together until well blended.

Emulsify the Aioli
Slowly drizzle in the olive oil while whisking continuously. This will create a creamy texture. Continue to whisk until fully emulsified and thickened.

Season the Aioli
Add salt to taste and mix well. Set aside in the refrigerator to chill while you prepare the rest of the dish.
Assemble and Cook

Prepare the Sandwich
Spread a generous amount of 'Nduja on two slices of sourdough bread.

Add Cheese
Thinly slice the Mahón cheese and layer it on top of the 'Nduja on the same slices of bread.

Top and Grill
Place the remaining two slices of sourdough on top to form sandwiches. Heat a non-stick skillet over medium heat and add a little olive oil. Once hot, place the sandwiches in the skillet.

Cook Until Golden
Grill each side for about 3-4 minutes or until the bread is golden brown and crispy, and the cheese has melted.
