Preparing the Toro

Marinate the Ahi Tuna

In a medium bowl, combine soy sauce, sesame oil, rice vinegar, honey, grated fresh ginger, and minced garlic. Whisk together until well combined. Place the Ahi Tuna steak in a shallow dish and pour the marinade over it. Allow it to marinate in the refrigerator for at least 30 minutes.

Prepare the Garnish

While the tuna is marinating, finely chop the green onions and set them aside. Toast sesame seeds in a dry skillet over medium heat for about 2-3 minutes until golden brown, stirring frequently.

Cooking the Toro

Sear the Ahi Tuna

Preheat a grill or a skillet over medium-high heat. Remove the Ahi Tuna from the marinade and sear it for about 1-2 minutes on each side for rare, or longer if you prefer it cooked through. It should still be pink in the center.

Slice the Tuna

Once cooked to your liking, remove the Ahi Tuna from the heat and let it rest for a minute. Slice the tuna into thin strips against the grain.

Serving the Toro

Assemble the Dish

To serve, place a scoop of sushi rice on a plate and top with slices of the seared Ahi Tuna. Garnish with chopped green onions and toasted sesame seeds. Serve with nori sheets, pickled ginger, and wasabi on the side.
