Chop the chicken breast into bite-sized pieces. Dice the red and green bell peppers, and onion into small pieces. Mince the garlic cloves.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent. Add the minced garlic and continue to sauté for another minute until fragrant.

Add the chopped chicken breast to the skillet, and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add Peppers and Spices

Stir in the diced red and green bell peppers, canned tomatoes, paprika, cumin, salt, and black pepper. Bring the mixture to a simmer and cook for an additional 10-15 minutes, stirring occasionally until the peppers are tender.
