Method
Making the Blueberry Shrub

Prepare the Blueberries
In a medium bowl, mash the fresh blueberries with a fork until they are mostly broken down.

Combine Ingredients
Add the sugar and apple cider vinegar to the mashed blueberries. Stir until the sugar is dissolved.

Infuse the Shrub
Cover the bowl and let the mixture sit in the refrigerator for at least 24 hours to allow the flavors to meld.

Strain the Shrub
After 24 hours, strain the mixture through a fine mesh sieve to remove the solids. Store the liquid in a sealed container in the refrigerator.
Preparing the Salted Honey Syrup

Combine Honey and Water
In a small saucepan, combine the honey and water over medium heat. Stir until the honey is completely dissolved.

Add Sea Salt
Once the honey is dissolved, add the sea salt and stir well. Remove from heat and let it cool.
Brewing the Tea

Boil Water
In a kettle, bring 2 cups of water to a boil.

Steep the Tea
Add the Blue Flower Earl Grey Tea to the boiling water and steep for 5 minutes. Strain the tea into a pitcher and let it cool.
Assembling the Drink

Mix the Ingredients
In a shaker, combine the brewed tea, 2 tbs of blueberry shrub, 1 tbs of lemon juice, and 2 tbs of aquafaba.

Shake Well
Shake vigorously for about 15 seconds until well mixed and frothy.

Serve
Pour the mixture into a glass filled with ice, then drizzle with salted honey syrup. Garnish with fresh mint leaves.
