Brew the Tea
In a saucepan, bring 2 cups of water to a boil. Once boiling, remove from heat and add 2 cups of Blue Flower Earl Grey Tea. Steep for 5 minutes, then strain and set aside.
Shrub Preparation

Make Blueberry Shrub
In a blender, combine 1 cup of blueberries, 1 cup of apple cider vinegar, and 1 cup of sugar. Blend until smooth. Strain through a fine mesh sieve into a bottle. Chill in the refrigerator for at least 2 hours or until ready to use.
Salted Honey Syrup Preparation

Prepare Salted Honey Syrup
In a small saucepan, combine 1 cup of honey and 1 cup of water. Heat over low heat until honey is dissolved. Add 1 tsp of sea salt, stir well, and let cool.

Garnish
Squeeze the juice of 1 whole lemon into the mixture, then add 2 tbs of aquafaba. Use a frother or whisk to mix until frothy. Top with fresh mint leaves for garnish.
