Preparing the Steak

    Pound the Steak

    Place the beef steak between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the steak to about 1/4 inch thickness. This will tenderize the meat and help it cook evenly.

    Marinate the Steak

    In a small bowl, mix the olive oil, salt, black pepper, minced garlic (from the garlic cloves), and fresh rosemary or thyme if using. Rub this mixture all over the pounded steak and let it marinate for at least 30 minutes at room temperature.

Cooking the Steak

    Heat the Pan

    Heat a large skillet or grill pan over medium-high heat. Allow it to get hot for about 5 minutes.

    Cook the Steak

    Once the pan is hot, add the marinated steak. Cook for about 2-3 minutes on each side until browned and cooked to desired doneness. Remove from the pan and let it rest for about 5 minutes before slicing.

Preparing the Salad

    In a large bowl, combine the arugula or mixed greens, halved cherry tomatoes, and thinly sliced red onion.

    Drizzle with balsamic vinegar and toss gently to combine. Top with shaved Parmesan cheese.
