Prepare the Spice Rub
In a mixing bowl, combine smoked paprika, black pepper, garlic powder, salt, dried thyme, and cayenne pepper. Mix well to create an even spice rub.

Prepare the Pork
Rinse the boneless pork shoulder under cold water and pat it dry with paper towels. This will help the spice rub adhere better.

Apply the Spice Rub
Rub the spice mixture all over the pork shoulder, ensuring it’s evenly coated. If using, drizzle olive oil and apple cider vinegar over the pork for added moisture and flavor.

Wrap and Marinate
Wrap the seasoned pork shoulder tightly in plastic wrap or butcher paper. Place it in the refrigerator and allow it to marinate for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 120°C (250°F). This low temperature will allow the meat to cook slowly and retain moisture.

Slow Roast the Pork
Place the wrapped pork shoulder on a roasting rack in a baking dish. Roast in the preheated oven for about 4-5 hours, or until the internal temperature reaches 70°C (160°F).

Rest and Slice
Once cooked, remove the pork from the oven and let it rest for at least 30 minutes before slicing. This will help the juices redistribute within the meat.
