    Roast the Spaghetti Squash

    Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, sprinkle with salt and pepper, and place cut-side down on a baking sheet. Roast for 40-50 minutes until the flesh is tender and can be easily shredded with a fork.

    Prepare the Filling

    Once the squash is roasted and cooled slightly, scoop out the flesh into a large bowl. Add the cooked rice, mozzarella cheese, Parmesan cheese, egg, chopped parsley, minced garlic, salt, and black pepper. Mix until well combined.

Forming and Cooking Arancini

    Shape the Arancini

    With clean hands, take a handful of the filling mixture and form it into a ball about the size of a golf ball. Repeat with the remaining mixture. Roll each ball in breadcrumbs until fully coated.

    Fry the Arancini

    In a deep skillet or pot, heat the olive oil over medium heat until shimmering. Carefully add the arancini in batches, frying until golden brown on all sides, about 3-4 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
