Garlic Oil

    Prepare Garlic Oil

    In a small saucepan, combine olive oil and peeled garlic cloves. Heat over low heat for about 15 minutes, allowing the garlic to infuse the oil without browning. Remove from heat and let it cool. Strain the oil to remove the garlic and set aside.

Seared Scallops

    Sear the Scallops

    Pat the scallops dry with paper towels and season with salt and black pepper. In a large skillet, heat the prepared garlic oil over medium-high heat. Add butter and let it melt. Once the butter is sizzling, add the scallops in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and opaque in the center. Remove from the skillet and set aside.

Urfa Pepper Saffron Aioli

    Make the Aioli

    In a mixing bowl, combine mayonnaise, urfa pepper, saffron threads, and lemon juice. Mix well until all ingredients are thoroughly combined. Taste and adjust seasoning if necessary.

Garnish

    Prep Garnish

    Thinly slice the scallions and chop the chives. Set aside for garnishing the scallops.
