Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a bowl, combine the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Whisk until well blended.

  2. 2

    Marinate the Chicken

Place the chicken thighs in a resealable plastic bag or a large bowl. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.

Cooking the Chicken

  1. 3

    Grill the Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken thighs for about 6-8 minutes per side, or until fully cooked and juices run clear. An internal temperature of 75°C (165°F) is recommended.

  2. 4

    Rest the Chicken

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

Assembling Tacos

  1. 5

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

  2. 6

    Build the Tacos

Slice the grilled chicken thighs and place them onto the warmed tortillas. Top with chopped onions, fresh cilantro, and serve with lime wedges on the side.
