Preparation of Quinoa

    Rinse the Quinoa

    Place 1 cup of quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes to remove any bitterness.

    Cook the Quinoa

    In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Chop the Vegetables

    Finely chop the garlic cloves, red bell pepper, and zucchini into small pieces.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Then add the chopped red bell pepper and zucchini and cook for about 5-7 minutes until tender.
