Making the Base

    Prepare the Dough

    In a large bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

    Cover the dough with a damp cloth and let it rest for 30 minutes at room temperature.

Preparing the Filling

    Sauté the Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add chopped spinach, black pepper, and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

    Mix the Filling

    In a mixing bowl, combine the sautéed spinach, ricotta cheese, and feta cheese. Mix until well combined.

Assembling the Rueda

    Roll Out the Dough

    Once the dough has rested, divide it into four equal portions. Roll each portion out into a thin circle on a floured surface.

    Place a generous amount of the filling mixture in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal.

Cooking the Rueda

    Bring a large pot of salted water to a boil. Add the filled rueda to the boiling water and cook for about 5-7 minutes, or until they float to the surface.

    While the rueda are cooking, heat the tomato sauce in a saucepan. Once heated, remove from heat.

Serving
