Prepare the Chicken
Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.

Chop the Vegetables
Dice the red bell pepper, chop the onion, slice the zucchini, and halve the cherry tomatoes.

Mince the Garlic
Peel and mince the garlic cloves finely.
Cooking

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs and sear for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the minced garlic, onion, and diced red bell pepper. Sauté for about 3-4 minutes until the onion becomes translucent.

Add Zucchini and Tomatoes
Add the sliced zucchini and cherry tomatoes to the skillet. Cook for another 3-4 minutes until the vegetables are tender.

Combine with Chicken
Return the seared chicken thighs to the skillet. Pour in the chicken broth and sprinkle fresh thyme over the top. Bring to a simmer.

Finish Cooking
Cover the skillet and let it simmer for about 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Optional: Garnish with fresh basil and sprinkle grated Parmesan cheese over the top before serving. Serve hot.
