Liquids and Seasonings

Method

Preparation

  1. 1

    Clean the Seafood

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped. Peel and devein the shrimp, and clean and slice the calamari into rings.

  2. 2

    Prepare the Vegetables

Dice the onion, red bell pepper, and tomatoes. Mince the garlic and chop the parsley.

Cooking

  1. 3

    Sauté the Base

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and red bell pepper, cooking for another 2-3 minutes.

  2. 4

    Add Tomatoes and Spices

Stir in the diced tomatoes, smoked paprika, salt, and black pepper. Cook for 5 minutes until the tomatoes have softened.

  3. 5

    Incorporate the Seafood

Pour in the white wine and fish stock, bringing the mixture to a boil. Once boiling, add the cleaned mussels, shrimp, and calamari. Cover the pot and cook for 5-7 minutes, or until the mussels have opened and the shrimp are pink.

  4. 6

    Finish and Serve

Once the seafood is cooked, stir in the chopped parsley. Serve hot with crusty bread on the side for dipping.
