Pork Loin Preparation

Season the Pork Loin
Preheat your oven to 375°F (190°C). In a small bowl, mix together salt, pepper, and chopped fresh rosemary. Rub the mixture all over the pork loin to season it.

Sear the Pork Loin
In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the pork loin and sear it on all sides until golden brown, about 3-4 minutes per side.

Roast the Pork Loin
Transfer the skillet to the preheated oven and roast the pork loin for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let it rest for 10 minutes before slicing.

Prepare the Tomatoes
While the pork is roasting, wash and dry the cherry tomatoes. Place them on a baking sheet and drizzle with 1 tablespoon of olive oil, salt, pepper, and balsamic vinegar.

Roast the Tomatoes
Roast the tomatoes in the oven alongside the pork for 20-25 minutes, until they are blistered and caramelized.

Toast the Garlic
In a small saucepan over low heat, add 2 tablespoons of olive oil and the peeled garlic cloves. Cook gently, stirring frequently, until the garlic is golden brown and fragrant, about 10 minutes. Remove from heat and let cool.
Olives Preparation

Prepare the Olives
In a small bowl, combine the mixed olives with 1 tablespoon of olive oil and 1 tablespoon of lemon juice. Toss to coat and set aside.
