    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, beat the eggs gently and gradually incorporate the flour from the sides until a dough begins to form.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead it for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, cooked spinach, nutmeg, salt, and black pepper. Mix well until fully combined.

Assembly

    Roll the Pasta

    After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

    Fill the Ravioli

    Cut the pasta sheets into desired shapes (squares or circles). Place a small spoonful of filling in the center of each shape. Moisten the edges with water and fold over to seal the ravioli tightly.

Cooking

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 4-5 minutes until they float to the top and are cooked through. Remove with a slotted spoon.

Sauce Preparation

    In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese, salt, and black pepper.

    Cook the sauce for another 2-3 minutes until slightly thickened. Stir in the chopped fresh basil just before serving.
