Trim excess fat from the pork shoulder and cut it into large chunks.

Sear the Pork
In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the pork chunks and sear until browned on all sides, about 4-5 minutes. Remove the pork and set aside.
