Preparing the Potatoes

    Peeling and Cutting Potatoes

    Peel the Russet potatoes and cut them into 1-inch cubes.

    Boiling Potatoes

    In a large pot, bring salted water to a boil. Add the potato cubes and cook for 5-7 minutes until slightly tender but not fully cooked. Drain and let them cool.

    Frying Potatoes

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the potato cubes in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Season with salt and black pepper. Remove and drain on paper towels.

Making the Spicy Tomato Sauce

    Sautéing Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Combining Ingredients

    Add tomato paste, canned diced tomatoes, smoked paprika, cayenne pepper, salt, and sugar to the saucepan. Stir well to combine.

    Simmering Sauce

    Bring the sauce to a simmer and cook for 10-15 minutes, stirring occasionally, until it thickens slightly.

    Finishing Touch

    Remove from heat and stir in the chopped fresh parsley.

Serving

    Plating the Dish

    Serve the crispy fried potatoes on a platter, drizzling the spicy tomato sauce generously over the top. Optionally, garnish with extra parsley.
