Method

Prepare Pasta

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

Prepare Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 3

    Add Vegetables

Add the zucchini, bell peppers, cherry tomatoes, carrot, and asparagus to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender but still crisp.

Make Sauce

  1. 4

    Add Broth and Season

Pour in the vegetable broth, and season with salt and black pepper to taste. Let the mixture simmer for 2-3 minutes.

  2. 5

    Combine Pasta and Vegetables

Add the cooked pasta to the skillet and toss everything together gently to combine. Cook for an additional 2 minutes to heat through.

  3. 6

    Finish with Cheese and Basil

Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil. Adjust seasoning if necessary.
