Prepare the Ingredients
Chop the onion, garlic, tomato, and red bell pepper. Set aside. Clean and devein the shrimp and mussels if not already done. Cut the chicken thighs into bite-sized pieces.

Cook the Chicken and Chorizo
In a large paella pan or skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken pieces and chorizo slices, cooking until the chicken is browned on all sides, about 5-7 minutes.

Add Vegetables
Stir in the chopped onion, garlic, red bell pepper, and tomato. Cook for about 3-4 minutes until vegetables soften.

Add Rice and Spices
Add the Bomba rice to the pan, stirring well to coat the rice with the oil and flavors. Add the paprika, saffron, salt, and black pepper. Mix everything together.

Pour in Broth
Slowly pour in the chicken broth, ensuring it covers the rice completely. Bring the mixture to a simmer.

Cook the Paella
Reduce the heat to medium-low and let the paella cook without stirring for about 15 minutes. After 15 minutes, add the shrimp and mussels evenly over the top, pressing them slightly into the rice.
