Prepare Chicken and Sausage
Cut chicken thighs into bite-sized pieces. Slice chorizo into rounds.

Rinse the shrimp and mussels under cold water and set aside.
Cooking the Paella

Sauté the Meat
In a large paella pan or a wide skillet, heat a tablespoon of olive oil over medium heat. Add the chicken and chorizo. Sauté until browned, about 5 minutes. Remove and set aside.

Cook the Vegetables
In the same pan, add another tablespoon of olive oil if needed. Add the chopped onion, garlic, and bell peppers. Cook until softened, about 5-7 minutes.

Add Rice and Broth
Stir in the Bomba rice, allowing it to toast slightly, about 2 minutes. Pour in the chicken broth and add the saffron threads. Bring to a boil.

Combine Ingredients
Return the chicken and chorizo to the pan. If using seafood, add shrimp and mussels at this point. Season with paprika, salt, and black pepper.

Simmer
Reduce heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

Rest and Garnish
Once done, remove from heat and let it rest for 5 minutes. Garnish with chopped parsley before serving.
