Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with olive oil or butter, then dust it lightly with flour.

    Mix Dry Ingredients

    In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    Beat the Eggs

    In a large mixing bowl, use an electric mixer to beat the eggs until they become frothy and pale in color, about 2-3 minutes.

    Add Wet Ingredients

    Slowly drizzle in the olive oil while continuing to beat. Then add the whole milk, vanilla extract, and lemon zest, mixing until fully incorporated.

    Combine Mixtures

    Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed just until combined. Be careful not to overmix.

    Pour Batter into Pan

    Pour the batter into the prepared cake pan, smoothing the top with a spatula.

    Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Once baked, remove from the oven and let the cake cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
