Clean the Mussels
Rinse the fresh mussels under cold running water. Scrub the shells with a brush to remove any dirt or barnacles. Discard any mussels that are open and do not close when tapped.

Cook the Mussels
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the white wine and bring to a simmer.

Season the Mussels
Stir in chopped parsley, salt, and black pepper. Remove from heat and set aside.
Sofrito

Prepare the Sofrito Base
In a separate skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and red bell pepper, cooking for about 5 minutes until softened.

Add Tomatoes and Seasonings
Stir in the diced tomato, minced garlic, cumin powder, paprika, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the mixture is well combined and the tomatoes have broken down.

Combine with Mussels
Once the sofrito is ready, add the cooked mussels into the skillet with the sofrito. Gently stir to coat the mussels with the sauce and allow to heat through for about 2 minutes.
