Prepare the Olives
In a large mixing bowl, combine the mixed olives. Make sure to include a variety of olives for a more complex flavor.

Prepare the Marinade
In a separate small bowl, whisk together the extra virgin olive oil, minced garlic (finely chopped), chopped fresh rosemary, chopped fresh thyme, red pepper flakes, and lemon zest until well combined.

Combine Olives and Marinade
Pour the marinade over the olives in the mixing bowl. Toss well to ensure all the olives are evenly coated with the marinade.

Season to Taste
Add salt and black pepper to taste. Mix again to distribute the seasoning.

Marinate
Cover the bowl with plastic wrap or transfer the olives and marinade to an airtight container. Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
Serving

Serve the Marinated Olives
Remove the olives from the refrigerator and allow them to come to room temperature before serving. Serve in a small bowl as an appetizer or alongside a charcuterie board.
