Method

Preparation

  1. 1

    Rinse Quinoa

Place the quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes to remove any bitterness.

  2. 2

    Chop Vegetables

Dice the red bell pepper and zucchini into small, uniform pieces for even cooking.

  3. 3

    Prepare Cilantro and Lime

Chop the cilantro finely and cut the lime in half for juicing.

Cooking

  1. 4

    Cook Quinoa

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

  2. 5

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced red bell pepper and zucchini. Sauté for about 5-7 minutes until they are tender.

  3. 6

    Add Beans and Corn

Stir in the black beans and corn kernels into the skillet with the sautéed vegetables. Add cumin, chili powder, salt, and black pepper. Cook for an additional 5 minutes.

  4. 7

    Combine Quinoa and Veggies

Once the quinoa is cooked, fluff it with a fork and add it to the skillet. Stir well to combine all ingredients evenly.

  5. 8

    Garnish and Serve

Remove from heat and stir in chopped cilantro. Serve warm, topped with diced avocado and a squeeze of fresh lime juice.
