In a mixing bowl, combine semolina flour and salt. Gradually add water, mixing until a dough forms. Knead on a floured surface for about 10 minutes until smooth.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Roll and Cut Pasta
After resting, roll out the dough into thin sheets using a pasta machine or a rolling pin. Cut into your desired pasta shape (tagliatelle, fettuccine, etc.).

Blend the Ingredients
In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.

With the processor running, slowly drizzle in olive oil until the mixture is smooth and well combined. Season with salt to taste.
Combining the Dish

Cook the Pasta
Bring a large pot of salted water to a boil. Add the freshly made pasta and cook for 2-4 minutes or until al dente. Drain the pasta.

In a large bowl, toss the hot pasta with pesto sauce until evenly coated.

Top the pasta with cherry tomatoes, diced mozzarella, and fresh basil. Season with salt and pepper to taste. Serve immediately.
