Croquetas

Garlic Aioli

Method

Croquetas

  1. 1

    Prepare the Filling

In a saucepan, melt the butter over medium heat. Add the flour and stir for about 2 minutes to create a roux. Gradually whisk in the milk, and cook until the mixture thickens, about 5 minutes.

  2. 2

    Add the Flavorings

Remove the saucepan from the heat. Stir in the finely chopped Jamon Iberico or Prosciutto, grated Manchego cheese, salt, black pepper, and nutmeg. Mix well until the cheese melts and everything is combined.

  3. 3

    Chill the Mixture

Transfer the filling to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours or until it is completely chilled and firm.

  4. 4

    Shape the Croquetas

Once the filling is firm, scoop about 1 tablespoon of the mixture and roll it into small cylinders or balls. Repeat until all the filling is used.

  5. 5

    Prepare for Frying

Set up a breading station with one bowl for beaten eggs and another for breadcrumbs. Dip each croqueta in the egg, then roll in the breadcrumbs to coat.

  6. 6

    Fry the Croquetas

In a large skillet, heat olive oil over medium heat. Fry the croquetas in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Garlic Aioli

  1. 7

    Prepare the Aioli

In a small bowl, combine mayonnaise, minced garlic cloves, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

  2. 8

    Chill

Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.
