Add the Flavorings
Remove the saucepan from the heat. Stir in the finely chopped Jamon Iberico or Prosciutto, grated Manchego cheese, salt, black pepper, and nutmeg. Mix well until the cheese melts and everything is combined.

Chill the Mixture
Transfer the filling to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours or until it is completely chilled and firm.

Shape the Croquetas
Once the filling is firm, scoop about 1 tablespoon of the mixture and roll it into small cylinders or balls. Repeat until all the filling is used.

Fry the Croquetas
In a large skillet, heat olive oil over medium heat. Fry the croquetas in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Prepare the Aioli
In a small bowl, combine mayonnaise, minced garlic cloves, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.
