In a large bowl, combine the mixed olives. Set aside.

Prepare the Giardiniera
Chop the giardiniera into bite-sized pieces if not already done and set aside.

In a separate bowl, whisk together minced garlic, chopped thyme, lemon zest, orange zest, olive oil, red wine vinegar, salt, and black pepper until well combined.
Marinating the Olives

Mix Everything Together
Pour the marinade over the olives and giardiniera in the large bowl. Toss gently to ensure all ingredients are coated in the marinade.

Let it Marinate
Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Allow the olives to marinate in the refrigerator for at least 2 hours, preferably overnight for better flavor.
