Method
Dough Preparation
- 1
Activate the Yeast
In a small bowl, combine warm water (110°F/43°C), sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
- 2
Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix with a wooden spoon until a shaggy dough forms.
- 3
Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Form it into a ball.
- 4
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm area for about 1-2 hours, or until it doubles in size.
Baking the Focaccia
- 5
Prepare the Baking Pan
Grease a 9x13 inch baking pan with olive oil. Once the dough has risen, punch it down and transfer it to the prepared pan.
- 6
Shape the Dough
Using your fingertips, press the dough into the corners of the pan, creating dimples all over the surface.
- 7
Add Toppings
Sprinkle fresh rosemary and coarse sea salt over the dough. Drizzle olive oil on top.
- 8
Second Rise
Cover the pan with a damp cloth and let it rise for another 20-30 minutes.
- 9
Bake the Focaccia
Preheat the oven to 400°F (200°C). Bake the focaccia for 20-25 minutes or until golden brown and cooked through.
- 10
Cool and Serve
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm.
