Preparation

  1. 1

    Prepare the Ingredients

Chop the pork belly, chorizo, and chicken into bite-sized pieces. Dice the onion and bell pepper, and mince the garlic. Chop the tomatoes.

  2. 2

    Cook the Beans

If using dried garbanzo beans, soak them overnight and cook them until tender. If using canned, drain and rinse them.

Cooking

  1. 3

    Sauté the Meats

In a large skillet or paella pan, heat the olive oil over medium heat. Add the pork belly and cook until browned, about 5-7 minutes. Then add the chorizo and chicken, cooking for an additional 5 minutes until the chicken is no longer pink.

  2. 4

    Add Vegetables

Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for about 4-5 minutes until the vegetables are softened.

  3. 5

    Incorporate Tomatoes and Spices

Stir in the chopped tomatoes, paprika, salt, and black pepper. Cook for another 3-4 minutes to allow the flavors to combine.

  4. 6

    Add Broth and Garbanzo Beans

Pour in the chicken broth and add the garbanzo beans. Bring the mixture to a simmer.

  5. 7

    Cook the Fideós

Add the fideó (a type of thin pasta) and cook according to package instructions, usually about 8-10 minutes, until the pasta is tender and the liquid has absorbed.

Serving

  1. 8

    Plate and Serve

Once the fideós are cooked, remove from heat. Let it rest for a few minutes before serving. Serve warm, optionally garnished with fresh herbs.
