Main Ingredients

Method

Cooking the Base

  1. 1

    Sauté the Aromatics

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

  2. 2

    Add Vegetables

Stir in the diced red bell pepper and zucchini, cooking for about 3-4 minutes until they begin to soften.

  3. 3

    Incorporate Rice and Spices

Add the basmati rice to the pot, stirring well to coat it with the oil and vegetables. Mix in the paprika, saffron, salt, and black pepper. Cook for another 2 minutes, allowing the rice to absorb the flavors.

  4. 4

    Add Broth and Chickpeas

Pour in the vegetable broth and add the drained chickpeas. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Finishing Touches

  1. 5

    Fluff and Serve

Once the rice is cooked, remove the pot from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.

  2. 6

    Garnish

Serve the Empordà warm, garnished with chopped fresh parsley and lemon wedges on the side for an extra burst of flavor.
