Rinse the Quinoa
Place 1 cup of quinoa in a fine mesh strainer and rinse thoroughly under cold running water for about 2 minutes. This helps to remove the natural coating called saponin, which can make quinoa taste bitter.

Cook the Quinoa
In a medium-sized pot, combine the rinsed quinoa and 2 cups of water. Bring it to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and all the water has been absorbed.

Chop the Vegetables
While the quinoa is cooking, chop the red bell pepper, cucumber, cherry tomatoes, and red onion into bite-sized pieces. Place them in a large mixing bowl.

Add Dressing
In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Pour this dressing over the quinoa and vegetable mixture.

Fold in Herbs and Optional Add-ins
Finely chop the fresh parsley and add it to the bowl. If using, crumble the feta cheese and slice the avocado. Gently fold everything together until well combined.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature.
