Preparation of Pork

    Prepare the Pork Shoulder

    Trim excess fat from the pork shoulder and cut it into large chunks.

    In a bowl, season the pork chunks with salt, black pepper, cumin, and paprika. Rub the seasoning into the meat thoroughly.

Cooking the Dish

    Sear the Meat

    In a large pot, heat the olive oil over medium-high heat. Add the pork chunks and sear them until browned on all sides. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add minced garlic, chopped onion, and diced bell pepper. Sauté until the onion is translucent.

    Add Tomatoes and Broth

    Stir in diced tomatoes and chicken broth into the pot, scraping the bottom to deglaze. Return the seared pork to the pot.

    Add bay leaves to the pot and bring the mixture to a simmer.
