Split the English muffins in half and toast them until golden brown. Set aside.

In a skillet over medium heat, cook the Canadian bacon or ham slices until heated through and slightly browned. Set aside.

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat and keep it warm.

In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt.

Slowly drizzle in the melted butter, whisking continuously until the sauce is smooth and thick. Add cayenne pepper for seasoning and keep warm.
