    Dice the eggplant, bell pepper, zucchini, onion, celery, and tomatoes into uniform pieces for even cooking.

    In a large skillet or pot, heat olive oil over medium heat. Add the diced onion, celery, and garlic, and sauté for about 5 minutes until they begin to soften.
