    Prepare the Dough

    In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and 2 tablespoons of vegetable oil. Bring to a boil over medium heat.

    Add Flour

    Once boiling, remove from heat and add flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Allow the dough to cool slightly, then add eggs one at a time, stirring well after each addition until smooth.

    Prepare for Frying

    Transfer the dough to a piping bag fitted with a large star tip.

    Heat Oil

    In a deep pot or fryer, heat 4 cups of vegetable oil to 375°F (190°C).

    Fry Churros

    Pipe 4-6 inch strips of dough directly into the hot oil. Fry until golden brown, about 2-3 minutes on each side.

    Coat in Sugar

    Remove churros with a slotted spoon and drain on paper towels. Immediately roll them in a mixture of 1 cup sugar and 1 teaspoon cinnamon.

Chocolate Sauce

    Heat Cream

    In a small saucepan, heat heavy cream over medium heat until it just begins to simmer.

    Melt Chocolate

    Remove from heat and add chocolate chips. Stir until melted and smooth. Add vanilla extract and mix well.
