Fritters Preparation

Prepare Chickpeas
Drain and rinse the canned chickpeas under cold water. Pat them dry with a clean towel to remove excess moisture.

Blend Ingredients
In a food processor, combine the chickpeas, chopped red onion, garlic cloves, and fresh parsley. Pulse until the mixture is coarse but well combined.

Add Spices and Flour
Add cumin powder, coriander powder, salt, black pepper, flour, and baking powder to the chickpea mixture. Pulse again until everything is combined, but do not over-blend. The mixture should hold together when pressed.

Form Fritters
With your hands, form the mixture into small fritters, about 2 inches in diameter. Place them on a plate or tray.

Heat Oil
In a large skillet, heat the olive oil over medium heat until shimmering.

Fry Fritters
Carefully place the fritters in the hot oil, frying in batches if necessary. Cook for about 3-4 minutes per side until golden brown and crispy.

Drain and Cool
Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Keep warm while you prepare the dip.

Mix Yogurt Dip
In a mixing bowl, combine the plain yogurt, lemon juice, minced garlic clove, salt, and fresh dill. Stir until well combined.

Chill Dip
Refrigerate the yogurt dip for at least 15 minutes to allow the flavors to meld together.
