Preparation

    Prep the Potatoes

    Wash the potatoes thoroughly. Cut them into quarters and place them in a bowl. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat.

    Prepare the Chicken

    Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper. Set aside.

    Prepare the Peppers and Garlic

    Remove the stems from the hot cherry peppers and slice them in half. Peel and crush the garlic cloves.

    Prepare the Lemon

    Zest the lemon and then cut it in half. Set aside.

Cooking

    Sear the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the chicken thighs and sear for 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Cook the Potatoes

    In the same skillet, add the prepared potatoes. Cook for about 10 minutes, stirring occasionally, until they start to brown and soften.

    Add Peppers and Garlic

    Add the sliced hot cherry peppers and crushed garlic to the skillet with the potatoes. Stir well and cook for an additional 5 minutes.

    Combine and Cook

    Return the seared chicken to the skillet. Squeeze the juice of half the lemon over the chicken and vegetables, adding the lemon zest as well. Cover the skillet and let everything simmer for 15-20 minutes, or until the chicken is cooked through and the potatoes are tender.

    Garnish and Serve

    Before serving, sprinkle fresh parsley on top. Serve hot with wedges of the remaining lemon on the side.
