Method

Preparation

    Prepare the Branzino

    Clean and gut the branzino fish if not already done. Make diagonal cuts on both sides of the fish to allow for even cooking.

    Marinate the Branzino

    In a small bowl, mix olive oil, minced garlic, salt, black pepper, and chopped parsley. Rub this mixture all over the fish and inside the cavity. Squeeze lemon juice over the fish and place lemon slices inside the cavity. Let marinate for at least 30 minutes.

    Prepare the Potatoes

    Wash and cut the potatoes into quarters. In a large bowl, toss them with olive oil, salt, black pepper, and chopped rosemary.

    Prepare the Carrots

    Peel and cut the carrots into sticks. In a bowl, mix the carrots with olive oil, honey, salt, black pepper, and chopped thyme.

Cooking

    Grill the Branzino

    Preheat your charcoal grill to medium-high heat. Place the marinated branzino on the grill and cook for about 6-7 minutes per side, or until the fish is cooked through and has nice grill marks.

    Roast the Potatoes

    While the fish is grilling, preheat the oven to 400°F (200°C). Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes or until golden and crispy, flipping halfway through.

    Roast the Carrots

    On another baking sheet, spread the seasoned carrots in a single layer. Roast in the oven alongside the potatoes for about 20-25 minutes, or until tender and slightly caramelized.

Serving

    Plate the Dish

    Once everything is cooked, plate the grilled branzino alongside the roasted potatoes and carrots. Garnish with additional parsley and lemon wedges if desired.
