Method

Base Preparation

  1. 1

    Make the Corn Dough

In a large mixing bowl, combine the corn flour, water, and salt. Mix until a smooth dough forms. Let it rest for 30 minutes.

  2. 2

    Form the Base

Divide the rested dough into equal balls (about the size of a golf ball). Press each ball into a flat disc about 1/4 inch thick.

Filling Preparation

  1. 3

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened (about 5 minutes).

  2. 4

    Add Chicken and Spices

Stir in the minced garlic, shredded chicken, and spices. Cook for another 5 minutes, stirring occasionally. Add lime juice and chopped cilantro, and mix well.

Assembly and Cooking

  1. 5

    Fill the Base

Take a corn dough disc and place a generous amount of the chicken filling in the center. Fold the disc over to create a half-moon shape and press the edges to seal.

  2. 6

    Cook the Cerro Chapeu

In a non-stick skillet, cook each filled Cerro Chapeu over medium heat for about 3-4 minutes on each side, until golden brown.

Serving

  1. 7

    Plate and Serve

Serve the Cerro Chapeu warm, topped with sour cream, sliced avocado, and grated cheese if desired.
